I've only ever stick welded with a Miller Bobcat. If I bought something like a Everlast 300ST, would I notice a big difference in starting and arch characteristics?

Yes. The biggest thing you will notice is when you strike up an arc. On an inverter there's no lag? Plus a lot of inverters have features like hot start. Real handy if your working on something dirty, rusty, oily, or painted. And inverters are much quieter :D
I have more questions than answers

Inverters weld a little different, but if you like the bobcat arc, you'll probably like an inverter arc even better.
