For anyone not in the earthmoving field (no pun intended) the wear bars are spaced apart like that so they trap the dirt in between. That way the trapped dirt protects the steel underneath.

Same thing with hard surface patterns on concrete pumps, and trash pump bends and fittings.
I have more questions than answers
